You have to remember that the oily stuff that you eat goes to form your chylomicrons (more) and/ VLDL (less). Margarines are made from long chain fatty acids attached to glycerol; butter contains short chain fatty aicds. If you eat margarine, more chylomicrons are formed; if you eat butter, more VLDL (and thus LDL are formed). BUT BECAUSE MARGARINES ARE HYDROGENATED TO CHANGE THE OIL STATE TO A SOLID STATE (make it firm, jadi keras), this hydrogenation process also creates unwanted chemicals called trans-fatty acids (TFAs). There is a limit of TFAs that is allowed in foodstuffs but most contain excess, cos consumers don't know anyway. TFAs are linked to coronary heart disease, they promote heart disease, and you suffer from heart attacks. Because of the presence of TFAs which are atherogenic, margarines are more toxic than butter. Butter is natural and needs no hydrogenation to make it firm - just refrigerate and it becomes hard.
